They are a perfect little snack bite. It’s a good thing they are so easy to make!

EnergyBitesI came up with these little bites of delicious goodness for my mom to have with her evening tea. Although, come to think of it, you could have these with your afternoon coffee. Or mid-morning latte. Or late-afternoon lemonade. 

You get the picture. They’re delicious. Any. Time. Of. The. Day.

And they are super easy. Just 3 ingredients: chocolate, pecans, and cranberries. Equal parts of each. Blend. Roll. It’s that easy, people.

I would also like to point out that these are the perfect little something to throw in your bag for snacking emergencies. Like on the commute home. Or in the middle of Target when you’ve just discovered the clearance rack and need fuel to keep going.

You can also freeze them. Per-fec-tion.

EnergyBitesHorizontalI opted to make this batch with pecans and dried cranberries. But you could switch that out for, say, almonds and dried apricots. You just need nuts, dried fruit, and chocolate. Because chocolate is not optional.

These came together beautifully- just sticky enough to stay together and a perfect balance of nuttiness and sweetness. If you swap out ingredients for a different type of nut or dried fruit and they are too crumbly, no worries. Just add a bit more dried fruit and re-blend until the “dough” is sticky enough to roll into bites.

I do recommend that you start by trying out the chocolate, pecan, cranberry combination. It’s DELICIOUS!

Chocolate Cranberry Pecan Energy Bites

  • Servings: 12 bites

3/4 cup pecans
3/4 cup dried cranberries
3/4 cup chocolate chips (use high-quality dark chocolate if you want dairy-free)

In a food processor, combine pecans, cranberries, and chocolate chips. Pulse until ingredients are chopped fine and starting to stick together. (See photo for an idea of the consistency.)

Scoop out a heaping tablespoon of the mixture and pinch it together until it stuck solidly together. Then roll it between your hands into a smooth ball.

It is best to form smaller balls (about 1″ in diameter) as they will stay together better than larger ones. Enjoy!
